This homemade cinnamon rolls recipe is not only delicious, but it is also keto friendly making this recipe ideal for people on a low carb diet.

Let's face it, eliminating sugar from your diet can be hard, but is something you can do.

However that does not mean you won't still want something a little bit sweet.

This cinnamon roll recipe uses Monk Fruit instead of sugar.

Of course, if Stevia is your preference, you can substitute that for the Monk Fruit.

Either way, this homemade cinnamon rolls recipe is sure to satisfy your craving for something sweet.

While the cheese might seem a little odd, you honestly won't know it is in there once you taste this cinnamon rolls recipe.

They really are that good.

The best part is, since this recipe does not use yeast, you don't have to worry about waiting for the dough to rise.

Plus you know exactly what is in this recipe, unlike when you buy pre-made packages of cinnamon rolls that you simply bake.

This homemade cinnamon roll dough recipe is easy to make in the microwave or on the stovetop. Once all the ingredients are combined and the cinnamon rolls are ready to bake, simply pop the cinnamon rolls into the oven and bake them.

For The Dough

For The Filling

  • ¼ cup monk fruit sweetener
  • 3 Tablespoons cinnamon
  • 6 Tablespoons butter, melted

For The Icing

  • ¼ cup monk fruit sweetener
  • 4 ounces butter, softened
  • 4 ounces cream cheese, softened
  • 1 teaspoon lime juice
  • 1 teaspoon vanilla extract

Instructions

  1. Place the cream cheese and two cups of the mozzarella cheese in a microwave-safe mixing bowl.
  2. Place mixture in the microwave* for 60 seconds.
  3. Remove the mixing bowl and stir the cheeses, then return the bowl to the microwave for an additional 30 to 45 seconds.
  4. Stir the mixture together well, and then add the coconut flour, xanthan gum and the eggs to the bowl with the melted cheese.
  5. Stir the mixture together.
  6. Add the remaining mozzarella cheese and return the mixing bowl to microwave* for 30 to 45 seconds.
  7. Then remove the bowl remove and stir again.
  8. Remove the dough from the mixing bowl and wrap the dough in plastic wrap.
  9. Place the plastic wrapped dough in the refrigerator for 40 minutes to allow it to firm up.
  10. When the time is up, remove the dough from the refrigerator, and set it on the counter.
  11. In a small mixing bowl combine the ingredients for the filling and stir them together.
  12. Place the dough on one half of a large sheet of parchment paper.
  13. Fold the parchment paper in half on top of the dough so that you can flatten it out with a rolling pin without it sticking to everything.
  14. After you have rolled the dough into a large square sheet, brush or spread the cinnamon mixture across the entire surface of the dough.
  15. Choose one end of the dough and roll it over on itself until you reach the other end.
  16. Cut the dough into nine equal pieces and place them into a square baking dish lined with parchment paper to prevent the cinnamon rolls from sticking to the pan.
  17. Bake the cinnamon rolls in a preheated oven at 375 degrees Fahrenheit for  25 to 30 minutes, or until they are golden brown on top.
  18. To make the frosting, combine the frosting ingredients in a large mixing bowl and stir them together until they are well combined. You can use a mixture for this if you prefer to.
  19. Once the cinnamon rolls are done, remove them from the oven.
  20. Remove the cinnamon rolls from the pan and place them on a cooling rack.
  21. Allow them to cool for 10 minutes, then spread the icing on them.
  22. Serve them warm. You can reheat them to soften them if necessary.

Notes

*For those who prefer not to microwave their food, simply put the cheeses into a skillet and melt them on the stovetop over medium heat making sure to stir them while they are melting so the cheese do not burn.
