This homemade chocolate cake recipe is moist, delicious and perfect for people who are allergic to eggs.

The Story Behind The Homemade Chocolate Cake Recipe

According to Jeffrey Rhoade’s mother, his great-grandmother, Verdia Barker, wanted a cake, however she was allergic to eggs.

So she went into her kitchen to try to come up with a cake recipe that did not use eggs.

What she ended up with this homemade chocolate cake recipe.

Years later, Jeffrey’s mother found it in her mothers recipe box and decided to give it a try.

While she has never been able to make it without the cake falling after she baked it, she continues to make this specific cake and simply turns it upside down so no one sees the indentation in the center of the cake.

The recipe did say it works better in a bread pan and she did finally try that when she decided to cut the cake recipe in half.

Ingredients

Scale
  • 3 cups Flour
  • 2 cups sour milk*
  • 2 cups sugar
  • 3 teaspoons baking soda
  • 4 Tablespoons cocoa
  • 1/2 cup lard*

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Combine the flour, sugar, cocoa and one teaspoon of baking soda together in a bowl.
  3. Put the soured milk and rest of the baking soda in another bowl.
  4. Add the contents of the bowl with the soured milk to the bowl with the dry ingredients.  Eggless chocolate cake batter being mixed in a bowl with a whisk.
  5. Melt the lard and add vanilla if desired, then mix that into the cake batter.
  6. Bake the cake in a bread pan for 30 to 40 minutes. This cake does make enough batter for two cake pans.
  7. Once the cake is done and the toothpick inserted in the center comes out clean, remove the cake from the oven and set it on wire racks to cool for 10 minutes.

Notes

*To sour regular milk, just add 1 Tablespoon of vinegar per cup of milk.

*You can use butter flavor Crisco in place of the lard.

Ways To Keep This Eggless Homemade Chocolate Cake Recipe From Falling In The Center

There are a number of ways to prevent a cake from falling in the center.

Here are some of those ways as well as how to correct them.

  • Incorrect oven temperature – always use an oven thermometer to check the temperature of your oven, especially if it is an older oven.
  • Under baking the cake – insert a toothpick in the center of the cake to make sure it is actually done. The toothpick should come out clean. If you see any batter on the toothpick, the cake is not done.
  • Expired baking powder – always check the date on your baking powder and discard any that is outdated.
  • Too much baking powder or baking soda – take the time to measure the ingredients correctly.
  • Incorrect measurement of ingredients – as stated above, always measure your ingredients correctly.
  • Opening the oven door too early – resist the urge to open the oven door to check on the cake until it is supposed to be done baking.
  • Closing the oven door too sharply – if you must open the oven door before a cake is done cooking, close the oven door gently.
  • Over beating the batter in the last stage – when you add the dry ingredients to the cake, mix it just long enough to incorporate the wet and dry ingredients. No longer than that!
  • Mixing the ingredients in the wrong order – always follow the recipe instructions carefully and add the ingredients in the order listed.
  • Incorrect moisture levels – measure your ingredients carefully and for those who live in a humid climate, make adjustments. Humidity does cause problems.
  • Incorrect pan size – use the correct pan size.
  • Cooling the cake too quickly – make sure the cake is not cooling in a drafty spot.
  • Batter sitting too long before baking – do not let the cake batter sit. As soon as it is done being mixed, pour it into the pan and place the pan in the preheated oven.
