Oatmeal Peanut Butter No Bake Cookie Recipe

  • 1/3 cup Carrington Farms Flax Chia Blend
  • 1/4 cup almonds, finely chopped
  • 1/8 tsp cinnamon
  • ¼ tsp salt
  • 1/2 cup peanut butter, melted and cooled enough so chocolate chips don't melt
  • 1/3 cup agave nectar
  • 1/2 tsp vanilla extract
  • 2 Tbsp mini chocolate chips
  • 1/4 cup chopped nuts or mini chocolate chips to roll cookies in

Instructions

  1. Combine the flax chia blend, almonds, cinnamon, and salt together in a mixing bowl.
  2. In a large bowl whisk together the peanut butter, agave nectar, vanilla extract, and chocolate chips.
  3. Dump the contents of the bowl with the flax chia blend into the bowl with the peanut butter mixture and stir to combine.
  4. Scoop out a tablespoon- sized ball of the mixture, then roll the mixture into a ball.
  5. Roll the ball around in chopped nuts or mini chocolate chips.
  6. Refrigerate the peanut butter balls for 1 hour, to allow the cookies to firm up so they are less sticky.
