How To Make Cherry Oat Crisp Casserole

  • 5 pints home canned cherries in medium syrup
  • 1 1/2 cups old-fashion oats
  • 1 cup light brown sugar
  • 1 cup unsalted butter
  • 1/2 cup flour
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon of the following spices mixed in equal amounts – nutmeg, ginger and coriander

Instructions

  1. Preheat the oven to 375 degrees Fahrenheit.
  2. Drain the cherries and put them in the bottom of the 9 x 13 baking pan.
  3. Add the dry ingredients to a large bowl and mix well.
  4. Use a pastry blender to cut in the butter until the mixture looks like coarse crumbs.
  5. Pour the mixture on top of the cherries making sure all of the fruit is evenly covered.
  6. Bake uncovered for 45 minutes.
  7. Remove the cherry oat crisp casserole from the oven and allow it to cool for about 15 minutes.
  8. Serve.

Notes

Note: This is a great make-ahead dessert. Just prepare it 24 hours in advance and put it in the refrigerator until you are ready to bake it.
